This is a salad we make at home when entertaining; it’s easy, exotic and delicious. Make sure you buy green mangoes; if they are ripe, you won’t be able to shred them properly.
Peel 2 green mangoes.
Remove the center.
Shred the using a grater.
Toast the Coconut in a broiler for several minutes.
Mix the Salad Dressing
· 3 Tbsp. fish or soy sauce
· 3 Tbsp. lime juice
· 1-2 Tbsp. brown sugar (to taste)
· 1-2 fresh red chillies, de-seeded and minced
Add bean sprouts, basil, spring onions, cooked shrimp or chicken plus half the toasted coconut.
Add the Rest of the Coconut
Add a handful of peanuts or cashews on top and serve! Try this thai salad recipe out, and be sure to share with friends! |
