From river rafting to rock climbing, here is a list of some of best Cambodia adventure travel possible:

Siem Reap. Take a river boat and marvel at the local fishing villages that float along the Tonle Sap Lake. On your return, make sure to stop at the Banteay Srei Temple,  a three story temple adorned with marvelous homages to the deities which was built in the tenth century. Siem Reap is without a doubt one of the most incredible sites I've ever seen.

Killing Fields of Cheoung Ek. No trip to Cambodia would be complete without a visit to this haunting  site, where thousands were brutally murdered during the Khmer Rouge. 
Angkor Wat. One of the most stunning architectural wonders of the world, this marvel was left undiscovered by Western civilization until the late 19th century. Like the Grand Canyon or the Taj Mahal, this is one of the places in the world that should never be photographed; pictures do not do this amazing sight justice.  A must see for adventure travel.

Mondulkiri . Though Cambodia may not be as famous for its rock climbing as Thailand, Mondulkiri is not to be overlooked. While not world class, this site can be very rewarding for beginner/intermediate climbers.

Phnom Penh. Explore this laid back town, and be prepared for some great trekking routes. You can spend anywhere between 2-5 days on the trails, and the land here is worth savoring. Be prepared to stay a few extra days.
